Noodlehoff Sandwich



12 oz. Freirich Corned Beef, thin sliced

6 large slices rye bread

6 oz. melted butter

8 oz. medium green noodles

1/2 cup sour cream

2 tsp. pickled relish

1/4 cup bread crumbs

1/2 tsp. salt

1/4 tsp. pepper

1/2 tsp. paprika

1/4 cup grated Parmesan cheese


Cook green noodles and drain thoroughly, do not rinse with water. Add sour cream, pickled relish, salt, pepper, 1/8 cup bread crumbs and 1/8 cup Parmesan cheese. Mix well. Butter bread slices on both sides, place on baking sheet, cover with corned beef, top with noodle mixture, sprinkle with remaining bread crumbs, Parmesan cheese, paprika and butter. Bake in oven at 375º for 15 minutes or until hot. Serves 6.
